Time: 15-30 mins

Ingredients :

Milk 1/2 litre
Eggs 3
Condensed milk 1 small can
Sugar 4 to 5 tspns
Any fruit essence


Method :

Blend 3 eggs in a blender first at low for 1 min and at high for 2 mins. Stop when you see bubbles on the liquid.Add milk and blend again for 2 mins on high.Add few drops of essence to this mixture.Add condensed milk to this mixture and blend again as above.Put an empty steel bowl (big enough to pour in 1 1/2 times the mixture) on medium-high heat, put 5 spoons of sugar and when sugar starts melting, slowly spread it all across the sides of the bowl. I'm sure lot of people know this process is called Caramelizing.Put this bowl in cold water right after taking it off the stove so that the caramel cracks and won't stick to the bowl after the pudding's set.Pour the milk mixture in this and pressure cook like idli for 20 mins on medium-high and 10 mins on medium. Once it cools down put it in the refrigerator and let it set for 5 hrs.The end result will look like "Junnu", the pudding which South Indians make with the milk of a cow which just had its baby.
