Egg Noodle

: Time Taken :
15-30 mins

: Ingredients :
1 packet noodle
2 eggs
1/4 tsp pepper powder
1/4 tsp oregano
1/8 tsp basil
1/4 tsp garlic powder
1/8 tsp onion powder
1/4 tsp curry powder
1 tsp chopped mint leaves
Salt as per taste
1 tbsp oil

: Method :
Boil noodles in boiling water will cooked.
Drain and run under cold water. Keep aside.
Beat eggs and add salt and pepper.
Heat 1 tsp oil in a pan.
Fry egg till well scrambled.
Remove and keep aside. Heat remaining oil.
Fry noodles for 2 mins.
Add eggs and remaining masalas except mint leaves.
Mix it well and let it cook for 5 mins.
Put in a plate. Garnish with mint leaves and serve hot.

Egg Pudding

Time: 15-30 mins

Ingredients :

Milk 1/2 litre
Eggs 3
Condensed milk 1 small can
Sugar 4 to 5 tspns
Any fruit essence

Method :

Blend 3 eggs in a blender first at low for 1 min and at high for 2 mins. Stop when you see bubbles on the liquid.Add milk and blend again for 2 mins on high.Add few drops of essence to this mixture.Add condensed milk to this mixture and blend again as above.Put an empty steel bowl (big enough to pour in 1 1/2 times the mixture) on medium-high heat, put 5 spoons of sugar and when sugar starts melting, slowly spread it all across the sides of the bowl. I'm sure lot of people know this process is called Caramelizing.Put this bowl in cold water right after taking it off the stove so that the caramel cracks and won't stick to the bowl after the pudding's set.Pour the milk mixture in this and pressure cook like idli for 20 mins on medium-high and 10 mins on medium. Once it cools down put it in the refrigerator and let it set for 5 hrs.The end result will look like "Junnu", the pudding which South Indians make with the milk of a cow which just had its baby.

Fried Egg Sandwich

Ingredients :
2 eggs, beaten
1 tbsp butter
1/4 cup capsicum, chopped finely
1/4 cup boiled peas
1/4 cup chopped and boiled French beans
Salt as per taste
1/2 tsp black pepper powder
1/4 tsp garlic paste
2 tbsp mayonnaise
4 bread slices, toasted and buttered

Method :
Heat butter in a pan.Put eggs, stir well.Add all the vegetable.Add salt, pepper powder and garlic past.Stir continuously till egg is cooked (consistency should be thick. Spread mayonnaise on two slices of bread (evenly).Layer with egg mixture (evenly on two breads). Cover with remaining two slices of bread. Serve with shredded carrots / lettuce leave.

Ingredients :
Vegetable Spray
1 each, medium onion, and red pepper, chopped
8 eggs
4 flour tortillas (15 cm/6-inches)
To Taste salt and pepper
125 mL (1/2 cup) Tex Mex or Cheddar shredded cheese, divided
125 mL (1/2 cup) salsa, divided
Optional Fat-free sour cream

Method :
Spray a 25 cm (10-inch) non-stick skillet with vegetable spray. Place skillet over medium heat and sauté onion and pepper until soft. Whisk together eggs, salt and pepper. Pour into skillet with vegetables and immediately lower heat to medium-low. As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains, but they are still moist. Place 125 mL (1/2 cup) of egg mixture on each tortilla. Garnish each with 30 mL (2 tbsp) shredded cheese and 30 mL (2 tbsp) salsa. Serve with sour cream, if desired.

Makes: 4 servings.

Cooking: 10 minutes.

Pizza Egg Melts

Ingredients :
2 English muffins, split
50 mL (1/4 cup) tomato sauce
15 mL (1tbsp) butter
125 mL (1/2 cup) sliced mushrooms
75 mL (1/3 cup) chopped sweet green pepper
4 eggs
25 mL (2tbsp) milk
pinch each salt and pepper
50 mL (1/4 cup) shredded mozzarella cheese

Method:
Under broiler or in toaster oven, toast muffins for about 1 minute or until golden.Spread each with 15 mL (1 tbsp) tomato sauce; set aside. In nonstick skillet, melt butter over medium heat.cook mushrooms and green pepper, stirring occasionally, for about 5 minutes or until softened. In bowl, whisk together eggs, milk, salt and pepper until combined. Add to pan and cook, stirring with spatula to form large soft curds, for about 1 minute or until eggs are thickened and moist but no visible liquid remains.Spoon eggs over muffins.Sprinkle with mozzarella cheese; broil for about 1 minute or until cheese is melted.
Makes 4: servings.

Egg Tacos

Ingredients :
8 taco shells
8 hard-cooked eggs, coarsely chopped
250 mL (1 cup) cream-style corn
10 mL (2 tsp) taco seasoning mix
250 mL (1 cup) shredded old Cheddar cheese, divided
Shredded lettuce, taco sauce and sour cream

Method :
Warm taco shells according to package directions.I n a large non-stick skillet, combine eggs,corn and taco seasoning mix.Cook and stir gently over medium heat until heated, about 3 minutes. Remove from heat.Stir in 125 mL (1/2 cup) cheese. Fill each taco shell with about 75 mL (1/3 cup) egg mixture.Garnish with lettuce, taco sauce, sour cream and 15 mL (1 tbsp) cheese.

Egg Piperade

Ingredients :
15 mL (1 tbsp) olive oil
1 large onion, chopped
3 cloves garlic, finely chopped
1 each large green, red and yellow sweet pepper, seeded and thinly sliced
8 eggs
To taste salt and pepper
4 plum tomatoes, seeded and chopped
15 mL (1 tbsp) each finely chopped fresh basil and Italian parsley

Method :
In a large, non-stick skillet, heat oil over medium heat .Sauté onion, garlic and pepper for 10 minutes or until soft. Whisk together eggs, salt and pepper. Stir in tomatoes. Pour into skillet with vegetables and immediately reduce heat to medium low. As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg.remains, but they are still moist. Garnish with basil and parsley.
Makes: 4 servings.
