Carrot and Mint Salad


Ingredients
2 large carrots
200 ml iced water
60 ml lemon juice
1 tbsp sugar
1/2 tsp salt
1 tbsp chopped fresh mint

Method
Pare the carrots into thin strips.

Combine them with iced water, lemon juice, sugar and salt. Cover and chill for 2 hours.

Just before serving, drain carrots. Combine with mint, mix gently and serve.
 

Spicy Pineapple

Time Taken : 15-30 mins

Method

Chop spring onions with greens finely.
Heat oil, add ginger, candlenuts, onions, strifry for a minute.
Add ground spices, stir fry for 1 more minute.
Add pineapple, water, cook for 2-3 minutes after it boils.
Add mint, sambal ulek, salt, sugar, mix well.
Cook till pineapple is soft but not mushy.
Serve hot.

Makes: 3 servings
Shelflife: Best fresh

Potato Salad

Ingredients :
4-5 potatoes, boiled and peeled
2 hard boiled eggs, peeled
1/2 cup mayonnaise
1/4 cup chopped red onions
1/4 cup chopped celery
1 tbsp vinegar
1/2 tsp sesame seeds
Salt as per taste


Method :

Chop the potatoes (approx 1" pieces)Coarsely chop eggsIn a bowl mix mayonnaise, onion, celery, vinegar, salt and sesame seedsAdd chopped potatoes and eggsToss it well
