Ingredients :
1 cup - almonds
2 ½ cups - sugar
2 cups - ghee
1 pinch - kesar(saffron)

Method :
Soak almonds in a bowl with boiling water.Remove the skin of almonds and make fine paste by grinding them in a grinder.Boil sugar with one cup of water in a pan.Boil till it turns into syrup.Add almonds paste to the boiling syrup and mix it well.Make a solution of kesar powder in little water and add to the syrupInstantly mix one cup gheeAs the above mixture turns paste-like, pour the remaining ghee gradually.A batter like mixture will be formed after sometime.Now remove it from the flameBadam halwa is ready to serve.

Pea Dumplings

Time: 15-30 mins

Indredients :
Peas -100 gms
Gram Flour -200 gms
Chilli powder-1/2 tsp
Coriander powder-1/2 tsp
Baking powder-1/2 tsp
Salt to taste
Water-1/4 cup (approx)
Oil for frying

Method :
Dry grind the peas in a mixee.mix with besan and put all other ingredients.
Mix water and make a thick batter. keep aside for 15 min.fry as small dumplings in hot oil.Serve with mint chutney or tomato ketchup.

Milk Toasted Sandwiches

Ingredients
6 slices large sized sandwiches bread
1 cup milk
2 tbsp grated cheese
butter to spread on slices
1 cucumber thinly sliced
salt
fresh ground black pepper

Method

Hold 3 slices at a time and cut diagonally to get six triangles. Keep each set of 3 separate so they fit one on the other exactly.Take the milk in a saucer. Use a cutting board to make the sandwich.Apply butter to the bread, dip in milk of 2-3 seconds. Place on the board. Spread some cheese. Sprinkle a pinch of salt and pepper. Apply butter to next slice, dip and place on first. Place cucumber slices on it. Sprinkle salt and pepper as before.Apply butter to third slice. Dip and place on second. Apply a dot of butter on top.Lift with a spatula and place on a warmed griddle. Toast the surfaces and sides till brown, turning to toast all over. Repeat for remaining sandwiches. If griddle is large many can be done at a time. Serve hot with french fries spicy ketchup and decorated with thin cabbage strips.

Veg Hotpot

Ingredients :
1cup boiled macaroni or noodles
1 1large onion grated
2 tomatoes grated
2 potatoes boiled and sliced thin or grated
1 capsicum deseeded and cut into thin rounds
1 spring onion finely chopped
1/2 tsp. ginger grated
1 tsp. garlic grated
1 tsp. red chilli crush or powder
1 tsp. sugar
1 tbsp. corn flour
salt to taste
1 tbsp. grated cheese
1 tbsp. coriander chopped
2 tbsp. butter

Method :

Heat butter. Add ginger, garlic, and onion. Stir fry for a minute.

Add vegetables except tomato and potatoes. Fry two more minutes.

Mix corn flour in 1 cup water to a smooth paste.

Add chilli, salt and sugar and tomato.

Mix well and pour into the vegetables, stirring as you pour.

Stir and bring to a boil. Simmer for 2-3 minutes till the milkiness of corn flour goes.

Boil till thick but of pouring consistency.

Mix the cheese in the potato (if grated).

Grease a casserole or ovenproof dish, and place the macaroni or noodles at bottom.

Pour the veg sauce on top.

Cover with slices of potato or sprinkle if grated.

Sprinkle the coriander all over.

Bake in a hot oven (300C) for 15 minutes or till potato cheese become golden brown.

To be eaten hot with warm buns or garlic dinner rolls.

Making time: 30-40 minutes

Makes for: 2

Note: You can boil the macaroni or noodles hours ahead, drain well and store in the fridge till required.

Graduation Sandwich

Ingredients :

Bread 1 loaf
Eggs 4 (boiled and chopped)
Cheese 100g
Butter
Pepper and Salt to taste.

Method :

Cut the sides of the bread and apply butter finely on one side of the slice.

Mix rest of the ingredients to a smooth paste.

Apply the paste on the bread slice and roll it gently.

Then, carefully tie a thin ribbon in the center of the rolled bread.

Note:

The paste can also be done with mashed potatoes with pepper and salt added to it.

Mutton Sandwich

Ingredients :
8 bread slices
Butter for applying on slices
1/4 kg boneless mutton, boiled
1/2 cup cheese, grated
1/2 tsp black pepper powder
1/2 tsp salt
1 tbsp butter (for sauting)
1/4 cup finely chopped onion
1 tsp ginger paste
1 tsp garlic paste

Method :

Heat 1 tbsp butter in a pan.Add onion, and fry till transparent.Add ginger-galic and saute for 2 min.Add mutton, salt and pepper.Fry till light brown.Remove from fire and let it cool .Slice the mutton into thin strips.Apply butter on bread slices.Between two slices of bread:

Arrange mutton pieces.Spread fried onion. Sprinkle cheese. Cut the sandwich into two trinagular sandwiches each.

Serve with tomato ketchup

Chicken Sandwich

Ingredients :
8 slices bread (white or brown)
1 cup cooked chicken (small pieces)
1 onion, chopped finely
1/2 cup corriander leaves
3 green chillies, chopped finely
Salt as per taste
1/4 cup mayonnaise
1/4 cup sour cream
Butter as required

Method :
Butter the breads.Mix all the ingredients except bread and butter well.Spread the mixture evenly on top of one bread slice.Cover it with one bread slice.Repeat the same with all breads (it will make 4 sandiwches). Toast the sandwiches in the toaster till golden brown Serve hot with lettuece and carrot slices.

Chappati Snacks

Ingredients :
4 - chappati`s
2 cup - besan
1 - grated onion
1 tsp - grated ginger
1 tsp - red chilli
salt according to taste

Method :
Take the chappati`s and cut it in any shape. Take a bowl add besan, onion, red chilli, ginger and salt and mix them well. Add water in this mixture to make a thick mixture so that they cover the chappati`s. Take the frying pan, add oil to fry the snacks. Take one piece of chappati, add to the mixture in the bowl and deep fry it in the frying pan. Your snack is ready

Lobster Snacks

Ingredients :
4 1 1/2 lb - lobsters, cooked
6 tbsp - butter
3 tbsp - all-purpose flour
1/2 tsp - ground nutmeg
1/8 tsp - paprika
1 1/2 cups - half-and-half
3 tbsp - sherry
1/2 cup - shredded cheddar cheese
parsley, for garnish
1 tsp - salt

Method :
Remove lobster meat, but leave shells whole. Do not twist head from tail, and leave antennae on head. Wash and drain lobster shells. Place meat, roe and liver in a large bowl. Cover bowl and wrap shells; refrigerate both. About 25 minutes before serving, place butter in 3-quart saucepan over medium heat and blend in flour, salt, nutmeg and paprika. Stir in half-and-half and sherry. Cook, stirring, until thickened. Add meat and cook just until heated, stirring occasionally. Preheat broiler. Place shells on rack in broiling pan. Fill with lobster mixture and sprinkle with cheese. Broil until mixture is hot. Place lobsters on plate. Garnish with parsley.
Serves: 4

Bottle Guard Snacks

Ingredients :
Bottle guard 1 kg
Rice flour 4-5 cups
Onions 5
Green chilli 3
Coriander leaves
Salt to taste
Oil to fry

Method :
Peel off the bottle guard and grate it thoroughtly.Grind the chopped onions lightly.Grind the green chilli very well.Add grinded green chilli and onions to grated bottle guard, and add sufficient rice flour.Add salt and coriander leaves.Take a wet cloth, make vada and fry it in heated oil.Eat with any pickle.You can make pakodi also.
